Friday night I passed out on the couch, full from cookies and pizza and totally unable to even think about getting up to go to bed. I woke up at 4:30 AM all snuggled up with the kittens and moved to my room to get some more zzzs.  When I woke a few hours later, I remembered a recipe for zucchini pancakes that I came across in my Ina Garten cookbook while deciding what cookies to bake. I’ve made these before but it’s been a while so I whipped up a batch for breakfast. Unlike regular pancakes, these puppies take a while to cook on the frying pan, so the whole experiment took about an hour from start to finish. They were a fun change though from my usual!

After breakfast, I hit the gym for 50 minutes on the elliptical. I was feeling sort of headachy and blah, so I added some coconut water to my bottle for extra electrolytes. I love this stuff!!!

I still wasn’t feeling so hot after the gym, so I came home and scrounged around for Advil before making lunch. How do I not have Advil?! Luckily, Julia’s got the goods. After my scavenger hunt, I made exactly what I was craving — yogurt mess!! Betcha thought I was skipping it today, huh 🙂

I was SO SNACKY! I haven’t really been that way the last couple of weeks, but I couldn’t stop thinking about food yesterday! I tried to get out of the house and do some errands, but eatin was on my brain. Do you guys ever have days where no matter how much you rationalize to yourself that you aren’t really hungry, you just want to eat and eat?? So I made myself a healthy snack plate with a gala apple, green beans and hummus 🙂

Of course this did nothing to quell my sweet tooth, so I had another cookie! After my snacking, TV watching and apartment cleaning, I got ready for my birthday dinner date with Stephanie.  We tried a place neither of us had ever been to called Akasha in Culver City. It was so cute!! According to the restaurant’s site:

I love how places like this are a dime a dozen in SoCal. Good food definitely isn’t hard to come by!  Even though the place had a killer cocktail list, we ordered nice cold glasses of Reisling to enjoy with our meal.

For dinner, I started with a bowl of the black bean soup. It was so smooth and delicious!

I got the red quinoa with orange-soy glazed chicken and veggies for my main dish. I felt so clean and healthy eating this meal! The sauce on the chicken was fantastic.

We were so torn between the desserts; they all sounded amazing!! We ended up going with the waitress’s recommendation, a chocolate peanut torte with choc PB gelatto (and some lemon verbena ice cream for Steph!). This tasted just like a slightly creamier fudge. MMM!

After we finished, the manager needed us to move for some reason (we never found out why, huh Steph??) so he relocated us to the bar and treated us to a round of drinks. I had half of another Reisling. Cheers birthday girl! We ended up staying at the restaurant for a good three hours.  We needed major catch-up time and just gabbed the night away 🙂

I got home after midnight and scooted into bed with a book and a stack of chocolate chip cookies. Yes, a stack!!! I’m serious you guys…I couldn’t stop snacking! Besides, is there anything better than cookies & milk in bed? I think NO.

I woke up Sunday morning ready to get back to basics — yogurt mess of course!

After breakfast settled, I hit the gym for 50 minutes of ellipticalling. I tried to sweat out some of that cookie stack LOL. For lunch I made an egg beaters veggie omelet with mushrooms, basil & red onion. I toasted up a Perfect 10 bagel topped with hummus and green beans on the side.

After lunch I ran some errands. I snacked on a cinnapple and some coffee to ward off the munchies!

As always, this did the trick! After another errand, I came back and watched TV/rested on the couch. I felt like such a slug all weekend! For some reason, I just couldn’t seem to shake the tired/hungry feeling.  My little moo shu porkie pie took a nap with me. Isn’t she cute??

I finally roused myself to make some dinner, another delicious veggie bake. This big bowl had fresh basil, yellow peppers, red onions, sweet potato cheetahs, carrots, a chile lime chicken burger, eggplant and 1/2 of a portabello, with some ketchup for dipping.

After dinner, the snack attack came back! I had a mint chocolate chip Skinny Cow which quieted my sweet tooth…

…but THEN I settled down to watch the rest of Maneater on Lifetime and had some more cookies and milk!! My sweet tooth was putting all sorts of demands on me this weekend. By the way, anyone else watch this Lifetime special and thing it was such a fun movie?! I didn’t realize until halfway through that it was based on a book I’ve already read (man, that Gigi Levangie Grazer is rocking the made-for-TV thing…Starter Wife was her’s too!).  I actually liked the movie more than I liked the book!

Three Things for Saturday

  1. Made my pancakes with vegetables!
  2. Ordered a healthy entree at dinner
  3. Didn’t finish my second glass of wine

Three Things for Sunday

  1. Made time for an early morning workout
  2. Cooked my omelet dry & with egg beaters
  3. Had my bagel with hummus instead of PB (already enough protein in that bagel, ya know??)

Today I have my big Monday morning meeting but after I get through that, the day shouldn’t be too bad. I can’t believe it’s already June! Los Angeles is out of May Gray and now into June Gloom. Forecast calls for clouds all week, BOO! When I first moved out here, I thought it was nice always but yeah, that’s a lie. I can’t wait for the sun to come back out and play!! Hope y’all are kicking off the week with a bang 🙂

Humpday already, YAY! For breakfast, I had another yogurt mess with blackberry yogurt, half banana, half cup kashi, and one cup mangolicious blend, plus coffee.

Since I had a dentist appointment at noon, I decided to have a coconut water and some grapes to tide me over until my late lunch. I missed my coconut water!

My tummy was growling though when I got back to the office around 2, so I toasted up a bagel with hummus and ate that with the other half of my tomato/motz/brussel sprout salad from the night before.

Later in the afternoon, I dug into my pre-workout fuel: a gala apple and pretzels dipped in 1 tbsp almond butter. I only had a flimsy plastic knife, so the apple “slices” are more like apple slivers!

I really, really wasn’t in the mood for the gym, but I sucked it up and pounded out 45 minutes on the elliptical before heading home.  I had a very crunchy pear while I was thinking of what to make for dinner…

I was craving some tortillas, so I decided to plan my dinner around them.  I mashed & heated up 1/2 cup black beans with some corn and salsa, then shredded 1/3 cup worth of extra sharp cheddar to top. I split all the ingredients between 2 La Tortilla Factory Tortillas.  I know I say this every time, but I love that these are 50 calories each so I can easily eat two!! It just makes my meal seem so much bigger. I popped the whole thing in the toaster for a few minutes.  Here’s the before and after 🙂

This was REALLY good, and healthy!! It’s amazing how a little cheese can really go a long way. For dessert, I had a repeat from last night: diet hot choc and a serving of pumpkin spice cookies.

Now I am just watching some TV before getting into bed. I am just having a BLAH night…hopefully some sleep will help. And it’s getting close to the weekend, whew!

Wow! I am all greened out!! Body Reset Day 3 started with a bowl of overnight oats. I made these with 1/2 cup rolled oats, 1 cup unsweetened almond milk, cinnamon & salt. I don’t know what I did wrong but I was NOT a fan. I basically had to force down this whole bowl!

I had some more coconut milk mid-morning. Today I tried a new brand — O.N.E., which stands for One Natural Experience. Another rockstar! I love this stuff. I wonder if they sell it anywhere in bulk?

Lunch was a salad identical to the one I had Sunday — 1/2 head butter lettuce, a little less than 1/2 avocado and a bunch of red onion, plus my homemade dressing.

After lunch I crunched on a handful of sunflower/pumpkin seeds.

Late afternoon I sipped this very green concoction I had juiced the night before. The drink contained basil, cucumber, lime, and a granny smith apple. I drank a little more than half…

…because dinner was even MORE greenery! Before eating, I did a nice half hour of yoga from On Demand Exercise TV.  Love that I can do that right in my living room!  I was sort of tired and not looking forward to anything intense, and this session was luckily a lot of nice spinal twists and downward dogs. Just what I needed!

We were planning on miso soup but decided to whip up a batch of pea soup instead. This one contained garlic, red onion, peas, a handful of lima beans, arugula, and basil. Again, SO easy to make! I think I liked the broccoli one best, but these two were pretty close in yummy taste.

We also made another juice, this one containing kale, celery, lemon, pear, and ginger. Here is a pic of the juice and the veggies all squeezed out!

I tried so hard to finish the juice but we really went overboard on the ginger and it was a little too spicy for me. I am overwhelmed just thinking of all this GREEN! Luckily we have SALMON planned for dinner tomorrow, YAY! I need a new color 🙂

Day 3 DOWN for the count!! 4 more to go 🙂 I kind of can’t wait til Sunday when this is over. I am just so stubborn and determined to finish it out. I’m almost halfway there, right?!

Sunday night, the roommate and I made some of our food for the week so we wouldn’t have to do too much late night cooking. We made broccoli soup, miso soup broth and chicken w/marinade. That night we had the broccoli soup. We made enough to eat it again Monday night, so you will see the pics later in this post!

Day 2 kicked off with lots of water and herbal tea, followed by a smoothie breakfast.  This smoothie had blueberries, ice, vanilla whey protein, and unsweetened almond milk.  The ice really added volume and I ended up with TWO water bottles full!

Mid-morning, I had some coconut water from Vita Coco.  I was pleasantly surprised by this and really liked the taste. Coconut water (not to be confused with coconut milk) has a whole list of benefits, including 5 essential electrolytes (potassium, sodium, magnesium, calcium and phosphorous). I am planning to drink one of these every day for the rest of the week! The only problem is the price…$2 each for these guys!

Lunch was chicken and spinach.  Julia made a great teriyaki marinade without any sugar or soy.

Following lunch, I munched on a few sunflower & pumpkin seeds.

Late afternoon snack was a serving of our kickass miso soup! All I had to do was add miso paste to our pre-made broth, heat, and eat.  I will definitely be eating this again this week.  Here’s the serving size:

Then I tossed in the watercress, which wilts into the soup when it’s hot. Actually, this was dryland cress, since Whole Foods was out of watercress. LOL I love those two names.

After work, I went to the gym to take a sauna. I did about 25 minutes to help sweat out some of the toxins and then went home. Tonight I might try for some yoga, but last night I just wasn’t feeling up to it. Dinner was a repeat of Sunday night’s soup! Seriously, this came out SO GOOD! Into the pot went broccoli, onion, garlic, S & P, arugula, basil, lemon, and 1 tbsp olive oil to sautee.

We added cilantro to the top for a tiny extra kick! I thought this soup turned out amazing and will definitely keep making it!
