Earl Grey Infused Pancakes With Blueberry Compote, Caramelized Banana And Maple Dressing

ED: Today i made Earl Grey Pancakes! Sounds odd but seriously, it is quite wonderful! Shut your eyes and try to imagine now, a floral citrus scent of Earl Grey diffusing through your nose as you take a alligator bite of moist spongy goodness with sweet warm banana, cold blueberry compote with a kick of port and toffee nutty maple syrup and rich creamy cold butter melting in your mouth all at once! (*catches breath) The result is deliciousness. This recipe was actually submitted for wait for it- THE GREAT PANCAKE CHALLENGE hosted by Sarah’s Loft! Serves 2-3
Pancake Mix

  • 1 1/2 cup all purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbs sugar
  • 1 1/2 cup milk
  • 1 egg
  • 3 tbs melted unsalted butter
  • 1/4 tsp vanilla essence
  • 4 sachets of earl grey tea

Steps for Pancake Mix

  1. Melt butter, heat milk and tea bags till it boils and turn off heat to prevent milk from evaporating and add sugar to dissolve. Cool butter and milk in ice bath to room temp.
  2. Sieve out flour, baking powder and salt to prevent lumps, add egg, vanilla essence, butter and milk. (you may wanna remeasure the milk to ensure its 1 1/2 cups. Top up if necessary.
  3. Mix well till there’s no lumps and let mixture rise for 25 minutes.
  4. Meanwhile start with the blueberry compote.

Blueberry Compote

  • 1 cup blueberries
  • 1 tbs sugar
  • 1/4 lemon juice
  • 1 tbs port (optional)

Steps for blueberry compote

  1. Add all ingredients into a pot and cook for 5 minutes in low heat till alcohol from port is cooked off. Cool and refrigerate till serving time.

After 25 minutes, start cooking the pancakes.

  1. Using a small pan, brush with a little melted butter and using a ladle fill the pan with pancake mix and spread evenly and place pan on low heat. cook till top bubbles up and seems a little dry before flipping the pancake over. Repeat till you finish the mix. It should make 5 large pancakes or 6 smaller ones.
  2. Half the banana. (half it with skin on before peeling) In another pan heat olive oil in high heat and fry banana till caramelized and golden brown. Be gentle with them and use a flat steel  spatula to flip it over as they’re really tender.
  3. Serve with blueberry compote, maple dressing, a cube of butter and earl grey tea.
