Red Orach, also known as mountain spinach, was one of the components of a mesclun mix I planted. It’s got a rather thick leaf for a salad green, so I’m not really sure what to do with it. Eat it raw in salads? Sautee it like full-size spinach? In any event, it’s a lovely plant, and it even looks healthier than my spinach. Pending taste testing, this might be something I need to plant more of next year:

Yep, it’s an iphone pic. With the right lighting and distance, the iphone takes pretty good pictures. It can’t handle close-ups, though.

You can saute’ it just like spinach with xv oil, garlic and shallots and that will tone down the bitterness. Orach has a very high nutritional value, and in my opinion a more complex flavor than sauted spinach
