Saboodana (Tapioca) Vada
When I think of Saboodana Vada, it reminds me of my visits to Pune. Saboodana Vadas are fried dumplings made from Sago/Tapioca and Potato and is very popular snack in the state of Maharashtra. It is a scrumptious snack that pairs up perfectly with afternoon Ginger-Mint Chai… Yummy! It has layers of flavors and textures that work so well together. It is spicy, crispy crust, soft center with a bite on toasty peanuts here and there and a hint of tanginess that wakes your taste buds.
Ingredients
½ Cup Saboodana (Soaked Overnight)
2 Small or one Medium Potatoes
2-3 Green Chilies
1 Inch Piece of Ginger
1 Tbsp Salt (or to taste)
2 Tsp Sugar
1 Tbsp Lemon Juice
½ Cup Raw Peanuts
¼ Cup Finely Chopped Coriander Leaves
Oil for Frying
Method
- Take a 1/2 cup of Sago/Tapioca in a container, add some water, lightly run your fingers through it to wash, and drain all the water. Sprinkle some water, cover and let it soak overnight or for at least 5 hours.
- Boil/Cook, peel, and mash Potatoes.
- Crush Ginger and Chilies to paste using very little water.
- Coarse grind Peanut.
- In a mixing bowl, gather all ingredients except oil and mix well.
- Check for seasoning and adjust if necessary mainly salt.
- Take enough dough to make an inch of a ball and press it lightly to make a patty.
- Heat Oil and fry patties on medium high flame until golden brown flipping them occasionally.
- Drain excess oil on a paper towel for a minute or two.
Best served hot with your favorite chutney, yogurt, or ketchup.
These look great and I’ve never made them with saboodana. Will have to try your recipe!
This looks great. I don’t know if I could manage the deep-frying myself. The last time I did, my apartment smelled like felafel for a week!
Thanks Dan…. I can understand you not wanting to fry in an apartment… Luck for me, i can open up my front and back door now that weather is nicer… and lighting nice smelling candles afterwords takes care of the smell.. 🙂
Meghna, these look lovely, I’ve wanted to try making them at home for quite sometime, and now with this recipe I think I will … nice blog space!!!
