Saboodana (Tapioca) Vada

When I think of Saboodana Vada, it reminds me of my visits to Pune.  Saboodana Vadas are fried dumplings made from Sago/Tapioca and Potato and is very popular snack in the state of Maharashtra.   It is a scrumptious snack that pairs up perfectly with afternoon Ginger-Mint Chai… Yummy!     It has layers of flavors and textures that work so well together.  It is  spicy, crispy crust, soft center with a bite on toasty peanuts here and there and a hint of tanginess that wakes your taste buds.

 Ingredients

½ Cup Saboodana (Soaked Overnight)

2  Small or one Medium Potatoes

2-3 Green Chilies

1 Inch Piece of Ginger

1 Tbsp Salt (or to taste)

2 Tsp Sugar

1 Tbsp Lemon Juice

½ Cup Raw Peanuts

¼ Cup Finely Chopped Coriander Leaves

Oil for Frying

 

 

Method

  1. Take a 1/2 cup of Sago/Tapioca in a container, add some water, lightly run your fingers through it to wash, and drain all the water.  Sprinkle some water, cover and let it soak overnight or for at least 5 hours. 
  2. Boil/Cook, peel, and mash Potatoes.
  3. Crush Ginger and Chilies to paste using very little water.
  4. Coarse grind Peanut.
  5. In a mixing bowl, gather all ingredients except oil and mix well.
  6. Check for seasoning and adjust if necessary mainly salt.
  7. Take enough dough to make an inch of a ball and press it lightly to make a patty.
  8. Heat Oil and fry patties on medium high flame until golden brown flipping them occasionally.
  9. Drain excess oil on a paper towel for a minute or two.

Best served hot with your favorite chutney, yogurt, or ketchup.

    This looks great. I don’t know if I could manage the deep-frying myself. The last time I did, my apartment smelled like felafel for a week!

      Thanks Dan…. I can understand you not wanting to fry in an apartment… Luck for me, i can open up my front and back door now that weather is nicer… and lighting nice smelling candles afterwords takes care of the smell.. 🙂

    this is one of my fav too.. actually has become my fav as I recently discovered this appetizer and my my my .. it’s perfect for evening snack with some tea 🙂
