Apple Cake

My life is at a point, where I get 1/18th of the cake that I bake because there are so many people that I would disappoint if I wouldn’t distribute it amongst them. I guess, I should be glad, but somehow I miss the times where I could eat half of my cake alone and I didn’t have this nagging voice in my head that tells me that others would want a piece as well. On the other hand the nagging voice that tells me that I get fat if I eat half a cake is gone. A good trade-off?

I had a discussion with my friends yesterday concerning me bringing food over to the lab often: Does it make me selfish or selfless if I bring leftovers to the lab? First option, if I would want to eat it: Definitely selfless, right? In the second scenario, the food would go to waste because I wouldn’t eat it. Is giving it to the others then an act of selflessness (I’m still giving my food to them, right?) or an act of selfishness (no bad conscience about not eating the food)?

Well with that cake it was definitely selflessness, as it was really nice. It was light and not dry and actually not too heavy. I’m still not a hundred percent sure how I feel about fruit pieces (apples, pears) in cakes, but I’ll figure it out and let you know. This recipe is definitely nice if you want a quick and simple cake.

Apple Cake
idea adapted from Italian Food Forever

150g sugar
2 eggs
1 teaspoon of vanilla extract
110g butter
270g flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
225g yogurt
2 medium apples
canola oil/butter

First step: Preheat the oven to 160°C. Melt the butter over low heat in a small pot, set aside. Combine the eggs, vanilla extract and sugar in a large bowl. Cut the apples into small cubes and put them aside.

Second step: Add the butter to the sugar mixture and whisk to combine. Add baking powder and soda and whisk more. Add the flour and yogurt in alteration, whisking constantly until everything is smoothly incorporated.

Third step: Prepare a Bundt form (ca. 25cm in diameter) with canola oil or butter. Add the apples to the cake and use a spoon to distribute them evenly in the batter. Spoon the batter into the form and put it directly into the oven.

Fourth step: Let the cake bake for about 35 to 40 minutes. It should be slightly brown on top when you take it out. Wait for about ten minutes, then turn it onto a plate and let it cool down completely. Enjoy! :)

    Are your labs boring, or is everybody overeaten, or why could this discussion start?

    • We were eating and the discussion came up because I frequently bring food to the lab. I don’t think that they want me to stop that though. :)

  2. So eating is allowed in the lab.
    In our “Internet Cafe”, you still get into trouble if there is only a bottle of water on the table ;)

    • There are fridges and microwaves in the lab as well as a coffee maker and water boiler. How else are you going to survive a 10-15h workday? :)
