Angel hair pasta with ribs cooked in tomato and red wine sauce :x



This is the second time I’ve made this dish. Last time, I used other kind of pasta and the pics’s quality wasn’t good, that’s why I decided to remake it and publish another post about this stunning classic Italian dish ^^ There’s no need to describe more about its deliciousness, which comes from the red wine and fresh tomatoes. I recommend that you should use angel hair pasta or any kind of pasta which has a thin shape, the sauce will go through and  contribute a deep, rich flavor.

If you understand Italian cuisine, you will know that using wine in cooking is usual: red wine for meat and white wine for seafood. Always works. I plan to do seafood pasta soon, but with so many kinds of seafood, I’m afraid that I can’t realize it =( Anw, I’ll try my best. For the passion of cooking, for the love of food (Masterchef Australia’s phrase xD)

     Ingredients: (serves:2)

200 grams pasta

400 grams pork ribs

70 ml red wine

350-400 grams tomatoes

Chopped garlic

1 tsp rosemary (optional)

Olive oil, salt, pepper

      Method:

1. Heat the oil in a large heavy based saucepan over high heat.
2. Season the ribs with salt and pepper and brown on all sides. Remove the ribs to a plate and discard the excess oil in the pan. Add the chopped garlic and rosemary, stir often for 2 mins. Add the red wine and wait for 2 mins until the red wine is hot enough.

3. Add the ribs and tomatoes, stir constantly, bring the mixture to a boil, reduce the heat and bring it to a simmer until the sauce is smooth and the ribs are soft and tender. Season with salt and pepper.

4. Cook the pasta til al dente. Keep warm and divide the pasta evenly between 2 plates. Serve with hot ribs and tomato and red wine sauce.
