Stirling Farmers’ Market will be back on Port Street this Saturday from 10am till 4pm with 16 stalls piled high with some of Scotland’s finest food, drink and crafts – including popular fishmongers Arbroath Fisheries. A second generation family business run by Campbell Scott, Arbroath Fisheries are one of Stirling’s longest standing stallholders and are renowned for their fresh produce. “As well as our wet fish we smoke our own salmon as well as our famous Arbroath Smokies,” says Campbell. “We clean haddock and cure them overnight in salt which toughens the skin to withstand the intense heat of the smoking process before tying them in pairs for hanging over sticks to dry. Then we lay them out above a fire barrel until they’re perfectly smoked - golden brown on the outside, once opened they reveal a creamy firm flesh with a slightly smoky almost sweet flavour which has to be tasted to be believed. After the barrel has been used to produce smokies we smoke our salmon when the fire is dying. A whole side of salmon can take anything between 1 and 3 hours depending on the strength of the fire and size of fish. This is in contrast to normal smoked salmon which is produced predominately in kilns using a sawdust or wood shavings fire. Unlike this product our hot smoked salmon gets its flavour from the smoking process with no further additives except salt. The flavour of the hot smoked salmon is unique, similar to a smokie but completely boneless and with a firmer texture, ideal cold with a salad, flaked through pasta or on the BBQ.” Campbell may be known for the high quality of his produce but the same might not be said for his banter. “Some folk say that my jokes aren’t that great but it’s just a vicious rumour,” he adds. “I’d say I’ve got a great sense of humour but I guess folk’ll need to pop down for some fish and find out themselves.” Stallholders at this week’s market will also be offering sourdough breads & rolls; authentic Lebanese deli items; local fudge & tablet; cheese & oatcakes; handmade pasta & sauces; artisan chocolates; butter & free range eggs; French & Scottish cakes & pastries; award-winning pies & sausage rolls; Ayrshire vegetables; preserves & chutneys; liqueurs & honey meads and a selection of local crafts and charities.
