Research & Development for bakeries, pastry shops and the industry.

We don’t just tell you how to do it, we show you. We have a state of the art research and development facility that allows us to produce and replicate almost any conceivable configuration or challenge. If your production requirements call for a complicated process involving engineering or preparation, we can do the work ahead of time. This helps us to test and manage outside variables in a controlled environment. We can then take our findings and re-apply them anywhere in the world. This is one of the many ways we ensure quality while meeting the needs of our clients.

Professional Training.

We provide in-house or on-site training to assist your company and your manufacturing process. We have a training school where we can directly train your employees or we can come to your business and teach them directly. We will customize almost anything to fit your requirements.

Keep your staff inspired and on board with your vision, excite them with your direction, concepts or practices through regular training sessions. In addition, training will give them the knowledge and skills they need to successfully implement and execute your ideas.

Insect Baking.

Yes, you read that right! This is a trend that is growing all over the world and we were exposed to a unique line of products by a world leader in Finland. We brought this knowledge back to Canada and are excited to share with you. It’s high protein bread manufacturing with help from insect flour and is a very intriguing way of increasing protein in breads and buns while not affecting the taste or texture.

Qualifications

Education

[ 1981 ] Chef Degree in Cologne, Germany
[ 1984 ] Received Masters in baking and pastry from Master School Dortmund & Master School Olpe, Germany. (At the age of 21, he was one of the youngest to have received the highest degree obtainable in the food industry). He also holds a Teacher’s Degree for educating students in the food and hospitality industry and has earned HACCP levels 1 & 2.

Heinz is trained to produce the artisan way of breads and sourdoughs, setting up bakeries, pastry shops and restaurants, as well as teaching freezer technology, equipment selection, developing new formulas or perfecting old ones and streamlining production.

Professional Experience

[ 1982 ] Heinz took over and re-built his fourth-generation family business on Herne, Germany, turning the business into a successful and profitable enterprise,

[ Since 1993 ] Heinz has baked and gained expertise in 55 countries including Afghanistan, Belarus, Bolivia, Brazil, British Guyana, Cayman Islands (Hurley’s), Colombia, Cuba, Dubai, England, Germany, Honduras, Hungary, India, Italy, Jamaica, Kuna Indians, Kuwait, Luxembourg, Mexico, Nicaragua, Norway, Panama, Poland, Sri Lanka (19 projects), Switzerland, USA and Venezuela.

[ 1997 ] Heinz was one of the Queen Elizabeth II’s bakers during her visit to Canada.

|| Henrietta’s Pine Bakery in Muskoka, Ontario: Built up this bakery to become one of the most famous bakeries in Canada.
|| Artisano Bakery Café in Toronto, Ontario: Responsible for the technical lay out and training of the staff.
|| The Pastechi House in Aruba and Curacao: Set up new operations and streamlined the existing operations resulting in winning the 1st prize for their pastechies in the Caribbean Islands.
|| LuLu Hypermarket in Dubai: Involved in developing a café chain (4,000 employees strong)
|| Bake Mark Canada: Worked as a Bakery Technician
|| Lentia Enterprise, Ireks/Arcady: Worked as a Bakery Technician
|| Meistermarken /Ulmer Spatz: Worked as a Bakery Technician - (These are 3 of the 5 leading ingredient manufacturers in the world)|| Stonemill Bakery: Technical work and more recently, I assisted in moving the company from 38,000 sf to 80,000 sf with an $11 million moving budget. (Stonemill Bakery is one of the leading European bakeries in Canada.)

Smith Snacks: Working in Newfoundland (the largest sandwich producer in the Province), Coleman’s (the largest supermarket chain in the Province), Chatman’s Bakery (the largest sweet and dessert manufacturing in the Province) & West Tower Bakery (the main producer in Central Newfoundland for bread, buns and pastries).
